I've looked at the gallery extension and I think this is not possible (yet). It can be build like that obviously.
But more important: why do you want to have this? A gallery is just like word says: a collection of pictures you can view!
I can imagine you want to limit the total number of pictures to be shown on your webpage at a given moment (which is also not possible at the moment), but not that you want to select just one of them!
Maybe you can elaborate on what you want to achieve?

Well, for example, I may want an image that represents the gallery to be clicked on to launch the fancybox pop-up.
This image could be captioned 'Click here for the Gallery' or something like that.

I could also see that instead of messing with the [[ gallery ]] tag, then [[gallery_image]] tag could be linked to pop-up a gallery of images in fancybox. This has the proper functionality, only I am not sure how to make an <a> tag to pop-up the fancybox viewer.

That's a totally different structure. Currently the gallery is a collection of images (the thumbs) each having their own anchor. The anchors are defined in such a way that they are grouped together as soon as Fancybox kicks in!
Gallery_image is intended to give you the option to only display a specific image out of the gallery.

Displaying one image that kicks off the entire collection in the gallery needs another html definition. I guess that's also possible but a bigger change than you think. Obviously any developer has to take into account that the popup could also be done by for example thickbox.
Or maybe it can be done by using display none for all those other images. You'll have to ask the developer of Gallery.

It just seems interesting to me that you would have a [[gallery_image]] tag that can preview an image from the gallery, but not a way to click it to launch a pop_up of the entire gallery contents.

I managed to change the gallery function in such a way that you can supply an optional beginning image and an optional ending image. The thumb image list only shows those images that are within the supplied range but the fancybox list shows them all.
In my view this could be useful to only show a specific amount of thumbs. Imagine that you have a gallery of over 100 images!
By setting the beginning image and the ending image parm to the same value you'll only get one image with the entire list in the fancybox showing. Is that what you're after?
If so, I have to submit the change to the official developers and get their approval. This can take a while. Are you in a hurry?

That is awesome, I can try the changed code out on my side if you have a way to post the changes to make. I am not in a huge hurry but would like to test it out.
Can the range be only one image long with the start and end being the same value?

The range can be only 1 long.

It works like a charm! Even better than what I originally had in mind.
