I know this subject has been touched on before, but I don't think it ever really got resolved:

When I add pictures to a gallery suing the 'bulk upload' (by selecting multiple files), there is no way to edit the title or alternative text for each picture after it's added. is this something that can be added in the future?

I've asked this one a long time ago (then in general) because I can imagine you want to do that in any case whenever you want those attributes changed. The answer at that time was that it's a lot of work and that this would maybe happen in the future. So maybe someone can create an extension for this? So an extension for an extension?

Can i upload more then the maximum (100?) pictures in a gallery? If yes, then how?

I didn't even know there was maximum! If so where do you get some kind of error?
You can also try to switch to bonusfields which has its own implementation of gallery (even better if you ask me and you can implement it while gallery extension is active to convert).

Can someone give me some direction how to show only the latest photo added with the gallery extension?

[[gallery_image number=1 attr=src latest=1]] (Is there a variable to do this?)

There is no latest var. But you were close!
You can get the last image in the gallery by coding

[[capture assign=gallcount ]][[gallery_count]][[/capture]]
[[assign var=gallcount value=$gallcount-1 ]]
[[gallery_image number=$gallcount attr=src]]

and go from there!
